Raw Chocolate Powder is made by compressing the raw cacao beans and extracting the fats to leave a concentrated chocolate powder. It's created by cold-pressing cacao beans into a cake. The temperature is closely monitored during this manufacturing process. It never exceeds 49ºC and is usually 40ºC. During this process the cacao butter begins to sift out. The remaining dry material is then cold-ground, fine-milled and sifted so that only the finest, raw particles filter through into the finished product. This allows for maximum digestion and antioxidant absorption.

It is vitally important that you don't confuse "our chocolate powder" with the ready-made powdered drinking chocolate that might produce a cup of 'hot chocolate' - that is a combination of chocolate powder, sugar and powdered milk and if mixed into batters will not taste chocolatey.
